I’ve had a can of Oregon’s Cherry Puree kicking around for about a year so I decided to put in a stout. I brewed a batch of Jamil’s Sweet Stout (from Brewing Classic Styles) and added the can after the fermentation died down. I had not racked this beer to secondary.
In the can the puree had a muted cherry sweetness, and I wasn’t too excited about it. I expected a brighter, more classic cherry flavor. However now that the beer is carbed that cherry flavor compliments the stout very well. It’s not terribly strong through, so if you’re looking for a strong cherry flavor I would add two cans of the puree for five gallons.
